Research into bread moulding shows that dough damage caused during sheeting is minimised by using a greater quantity of small diameter rollers. The new "Multitex4" has four pairs of sheeting rollers, with adjustable speed and gap, ensuring that bread quality is greatly improved without increasing ingredient costs or reducing output.
A new table has been designed to complement the "Multitex4" head by minimising dough damage, whilst simultaneously improving every aspect of
operational efficiency.
